Roast Pumpkin Galangal

This is for the pumpkin lovers out there, whether it's roast pumpkin or pumpkin soup, there is something about it that satisfies. We slow roast our pumpkin then puree with roasted garlic, capsicum, chipotle, and of course galangal. The result is a comforting hug that warms you all over, medium heat.
